New Fall recipe is up! My crockpot is getting a lot of action already this Fall, and this is just the beginning. I try and make a habit of throwing a little something in the crockpot every Sunday! It sets me up for the week ahead by having plenty of leftovers, plus it makes my meal prep super simple and almost effortless. This recipe is no exception.

White Bean, Sausage + Veggie Soup [crockpot]

servings: about 8

INGREDIENTS

  • 4 organic Italian chicken sausages, sliced thinly [I used the True Story® brand from Costco]
  • 1 Tbsp olive oil or coconut oil
  • 4 cups low-sodium organic chicken stock or homemade bone broth
  • 2 cups water
  • 2 cans white beans, drained + rinsed OR 2 cups dried and precooked white beans
  • ½ onion, diced
  • 4 garlic cloves, minced
  • 5-6 carrots, cut into coins
  • 5-6 celery stalks, diced
  • 4 handfuls fresh baby spinach
  • 1-2 red potatoes, diced [optional]
  • 1 tsp Italian seasoning
  • 3 bay leaves
  • ½ tsp sea salt
  • ½ tsp black pepper
  • ½ tsp red pepper flakes [optional for a little spice]

DIRECTIONS

Heat a large skillet to medium heat. Add olive oil or coconut oil. Next, add sausage and sauté for 5-8 minutes, stirring occasionally until sausage is seared. In the meantime, add all other ingredients to crockpot [except spinach]. Add sautéed sausage to crockpot with other ingredients and stir to combine. Add lid to crockpot and cook on high for 4-5 hours or low for 7-8 hours until all veggies are tender. Last, add fresh spinach and cook for additional 5-10 minutes until wilted. Enjoy!
