Raw Key Lime Coconut Balls

Ingredients
  • 2 cups unsweetened, shredded coconut
  • ½ cup raw almonds
  • 3 Tbsp honey
  • juice of 2 key limes
  • zest from 1 key lime
  • 1 Tbsp unrefined coconut oil, melted
Instructions
  1. Add all ingredients to a food processor.
  2. Process until all ingredients are finely chopped and combined. You may need to stop and scrape down the sides of the food processor bowl a couple of times to get everything incorporated well.
  3. Next, spoon about 1½ Tbsp of mixture into your hands and form a tight ball, rolling the mixture between your palms.
  4. Place ball on a parchment paper lined baking sheet [that will fit in the refrigerator].
  5. Do this until all of the mixture is used up.
  6. Refrigerate balls for at least 1 hour. Once they have hardened, you can transfer the balls to an airtight container for storage.
  7. Store in the refrigerator for 1-2 weeks.
