Dark Chocolate Covered Frozen Banana Bites

Ingredients
  • 1 large bunch of ripe bananas
  • 2 dark chocolate bars [the less sugar the better, this is what I used]
  • 3 Tbsp unrefined coconut oil
Instructions
  1. Heat dark chocolate and coconut oil in small pot on low-medium heat.
  2. Stir constantly to avoid burning.
  3. Once completely melted, remove from heat and let cool until it reaches warm or room temperature.
  4. In the meantime, peel and slice bananas into bite-size pieces. You can slice them as thin or thick as you want. I prefer about a ½ to 1 inch pieces.
  5. Once chocolate/coconut oil mixture has cooled, dip each piece of banana into the chocolate and place on a parchment paper lined baking sheet [make sure your baking sheet can fit in your freezer].
  6. Don't be afraid to get your hands dirty here as it can be a messy process.
  7. Once all banana pieces are dipped, place lined baking sheet in freeze and let freeze for about 30 minutes until completely set.
  8. Transfer banana bites to a container with a lid and store in the freezer for up to 2 weeks.
