White Bean, Sausage + Veggie Soup [crockpot]

Ingredients
  • 4 organic Italian chicken sausages, sliced thinly [I used the True Story® brand from Costco]
  • 1 Tbsp olive oil or coconut oil
  • 4 cups low-sodium organic chicken stock or homemade bone broth
  • 2 cups water
  • 2 cans white beans, drained + rinsed OR 2 cups dried and precooked white beans
  • ½ onion, diced
  • 4 garlic cloves, minced
  • 5-6 carrots, cut into coins
  • 5-6 celery stalks, diced
  • 4 handfuls fresh baby spinach
  • 1-2 red potatoes, diced [optional]
  • 1 tsp Italian seasoning
  • 3 bay leaves
  • ½ tsp sea salt
  • ½ tsp black pepper
  • ½ tsp red pepper flakes [optional for a little spice]
Instructions
  1. Heat a large skillet to medium heat. Add olive oil or coconut oil. Next, add sausage and sauté for 5-8 minutes, stirring occasionally until sausage is seared. In the meantime, add all other ingredients to crockpot [except spinach]. Add sautéed sausage to crockpot with other ingredients and stir to combine. Add lid to crockpot and cook on high for 4-5 hours or low for 7-8 hours until all veggies are tender. Last, add fresh spinach and cook for additional 5-10 minutes until wilted. Enjoy!
