4 organic Italian chicken sausages, sliced thinly [I used the True Story® brand from Costco]
1 Tbsp olive oil or coconut oil
4 cups low-sodium organic chicken stock or homemade bone broth
2 cups water
2 cans white beans, drained + rinsed OR 2 cups dried and precooked white beans
½ onion, diced
4 garlic cloves, minced
5-6 carrots, cut into coins
5-6 celery stalks, diced
4 handfuls fresh baby spinach
1-2 red potatoes, diced [optional]
1 tsp Italian seasoning
3 bay leaves
½ tsp sea salt
½ tsp black pepper
½ tsp red pepper flakes [optional for a little spice]
Instructions
Heat a large skillet to medium heat. Add olive oil or coconut oil. Next, add sausage and sauté for 5-8 minutes, stirring occasionally until sausage is seared. In the meantime, add all other ingredients to crockpot [except spinach]. Add sautéed sausage to crockpot with other ingredients and stir to combine. Add lid to crockpot and cook on high for 4-5 hours or low for 7-8 hours until all veggies are tender. Last, add fresh spinach and cook for additional 5-10 minutes until wilted. Enjoy!
