½ cup coconut sugar (I've recently been using ¼ cup sugar and they still taste great!)
¼ cup coconut oil, softened
½ tsp baking soda
1 tsp vanilla
pinch sea salt
½ your favorite dark chocolate bar, chopped into chunks
2 Tbsp cacao nibs [optional]
Instructions
Preheat oven to 350°.
In a large mixing bowl, add all ingredients except for chocolate chunks and cacao nibs if using.
Mix well to combine.
Last add chocolate and cacao nibs and stir into batter.
Spoon out tablespoon size cookies onto a parchment paper lined baking sheet. Cookies will spread so leave some room between them. I use a small ice cream scoop to get the perfect size and shape.
Bake for 7-9 minutes until golden brown and slightly crispy around the edges.
