In a square baking dish, place sliced apples, cinnamon and fresh grated ginger.
Stir around to coat apples evenly.
In a medium sized mixing bowl add oats, almond flour, baking powder, coconut sugar and vanilla.
Stir mixture.
Add cubed butter, and using your hands, massage the butter into the oat/flour mixture until the butter is dispersed throughout. There will still be chunks of butter and that's okay.
Place the batter on top of your apples and spread it out evenly.
Bake for 30-35 minutes until topping becomes golden brown.
Remove from oven and let cool slightly before serving.
Can be served warm, room temperate or refrigerated.
