Crockpot Noodle-Less Chicken Noodle Soup

- 2 organic chicken breasts
- ¾ cup dry quinoa
- 5-6 carrots, peeled + chopped into coins
- 6-8 stalks celery, chopped
- ½ yellow onion, diced
- 2 garlic cloves, minced
- 8 cups chicken stock
- 4 cups kale, ribs removed + chopped
- 1 tsp sea salt
- ½ tsp black pepper
- ½ tsp dry thyme
- ½ tsp dry oregano
- ½ tsp red pepper flakes [optional]
- Place raw chicken breasts in bottoms of a large crockpot bowl.
- Next add dry quinoa, carrots, onion, celery, garlic, dried herbs, red pepper flakes, black pepper and sea salt.
- Top with chicken stock and stir.
- Cook on high for 4 hours or low for 8 hours.
- Once done, remove chicken and shred [chicken should be so tender that it falls apart when you remove it from the crockpot to shred].
- Add chicken and kale to crockpot.
- Cook for additional 10-20 minutes until kale has wilted.
- Serve and enjoy!
