Southwest Turkey + Vegetable Skillet

Serves: about 4
- 1 pound organic ground turkey
- 1 Tbsp coconut oil or olive oil
- ½ cup sliced mushrooms
- 1 small butternut squash, peeled + cubed [about 1.5 cups]
- 1 green bell pepper, diced
- 1 red bell pepper, diced
- ½ yellow onion, sliced thinly
- 2 cups fresh baby spinach
- 1 tsp sea salt
- ½ tsp black pepper
- 1 Tbsp chili powder
- 2 tsp cumin
- squeeze lime juice
- Heat oil in dutch oven or large pot on medium heat.
- Add onion + bell peppers. Sauté for 3-5 minutes until slightly tender.
- Add mushrooms, butternut squash, chili powder, cumin, sea salt + pepper. Sauté for 5 minutes.
- Add ground turkey; stir + break up well.
- Cook, stirring occasionally for 20-25 minutes until squash is fork tender.
- Last, add spinach and cook until wilted.
- To serve squeeze with fresh lime juice and top with your favorite hot sauce.
- Serving suggestion: this can be served on it's own, in organic corn tortillas, on salad greens or in lettuce wraps.
