Nutty Dark Chocolate Bites

Ingredients
  • 2 bars high quality dark chocolate [70% cocoa or higher; I like the Green & Blacks brand 85% cocoa]
  • ½ cup raw cashews, chopped
  • ½ cup raw pecans, chopped
  • ¼ cup cacao nibs
  • ¼ cup dried apricots, chopped
  • ½ tsp sea salt
Instructions
  1. Coarsely chop nuts + dried fruit.
  2. Melt dark chocolate in a double boiler or by placing glass bowl on top of pot with boiling water. Stir chocolate occasionally to prevent burning.
  3. Once completely melted, remove from heat and let sit for 5 minutes.
  4. Line a baking sheet with parchment paper.
  5. Using a tablespoon measure, spoon nut + fruit mixture onto parchment paper, leaving about 1 inch between each pile.
  6. Next using a tablespoon measure, carefully pour 1 Tbsp dark chocolate onto fruit + nut mixture. The chocolate will spread slightly.
  7. Top each pile with a pinch of cacao nibs and sea salt.
  8. Transfer baking sheet to the fridge and allow 30 minutes to completely set up.
  9. Once set, remove from baking sheet and store in an airtight container in the fridge. Enjoy!
