Okay you guys, if you know me you know I might have a little bit of a chocolate “problem”. I admit it. I love my dark chocolate and I could eat a whole bar if I sat down with one, so it’s no surprise that I like to bake with chocolate, too! Dark chocolate that is. The darker the better. Generally, I suggest eating dark chocolate with 70% cocoa or higher. The more cocoa, generally the less sugar.
In addition to loving chocolate, I also love being able to feel good about what I’m eating even if it happens to be cookies. These chocolate chunk cookies have a great texture and are just sweet enough without being overly sweet, and they contain zero refined sugars! Coconut sugar is what I used in this recipe and it’s a favorite natural sweetener of mine.

I love using coconut sugar in baking and with other sweet goodies. While sugar is still sugar, coconut sugar [or coconut palm sugar] is less refined than white sugar and it contains some nutrients including: potassium, magnesium, iron and vitamin C. Coconut sugar is also lower glycemic than its white sugar counterpart, making it a better alternative for those watching your blood sugar, but also for anyone looking for a slightly healthier white sugar alternative. My daughter Hallie loves to watch me cook, and helps when she can. She loves to get her hands dirty and do a little taste testing, too! And who could blame her. This recipe is so simple that kiddos can get there hands a little dirty and help to make them. Just throw all the ingredients together in a bowl and mix. Really, that’s it!

Gluten-Free Chocolate Chunk Cookies with Coconut
servings: about 24
INGREDIENTS
- 1¼ cup almond meal
- ¼ cup finely shredded unsweetened coconut
- 1 egg
- ½ cup coconut sugar [I’ve recently been using ¼ cup sugar and they still taste great!]
- ¼ cup coconut oil, softened
- ½ tsp baking soda
- 1 tsp vanilla
- pinch sea salt
- ½ your favorite dark chocolate bar, chopped into chunks
- 2 Tbsp cacao nibs [optional]
DIRECTIONS
Preheat oven to 350°. In a large mixing bowl, add all ingredients except for chocolate chunks and cacao nibs if using. Mix well to combine. Last add chocolate and cacao nibs and stir into batter. Spoon out tablespoon size cookies onto a parchment paper lined baking sheet. Cookies will spread so leave some room between them. I use a small ice cream scoop to get the perfect size and shape. Bake for 7-9 minutes until golden brown and slightly crispy around the edges. Enjoy!
